Cheese & Herb Savoury Scones

1.
Place water & buttermilk scone mix into a mixing bowl.
2.
Using a planetary mixer with a dough hook mix on slow speed to form a soft dough. NOTE: Do not over mix as this will toughen the scones.
3.
Blend the chese & herbs into the batter and mix in slowly.
4.
Remove dough from mixing bowl and place on floured surface.
5.
Knead the dough to the correct thickness (18mm).
6.
Cut out scones using a 50mm round or fluted cutter.
7.
Place scones on a lightly greased & floured baking tray and brush with milk or egg wash if desired).
8.
Allow scones to rest for 15 minutes & then place in a pre-heated 230C FOR 15-20 minutes.
