Blackforest Cake with Dark Cherries

1.
Place cake mix, eggs and water into a mixing bowl and blend together with electric mixer for 30 seconds on low

Mix for an additional 5 minutes on high, place into a 20cm cake tin and bake at 170°c for approximately 40 minutes, or until firm. Allow cake to cool on wire rack

Whip cream until soft peak, fold in sugar and fully whip to stiff peak

Drain dark cherries, (reserve syrup) cut cake into 3 even pieces so that you create 3 layers

Brush dark cherry syrup over the bottom 2 layers, spread a 1/3 of the whipped cream over each layer.

Top with drained cherries, and place on top of each other, then place on 3rd layer (lid), press down to help combine the layers

With remaining cream mask entire cake and reserve some cream to pipe rosettes around the top
8.
Coat outside of cake with chocolate shavings, garnish with maraschino cherries, portion and serve
