Bacon Wrapped Meatloaf with Gravy & Potatoes

Preheat oven to 200c, place all ingredients for meat loaf (except bacon) into a bowl and mix well until combined

Line 2 x 2lt loaf pans with streaky bacon, evenly divide mix into each pan, press down to firmly pack mixture, and bake for 40 minutes

Peel potatoes, cut into wedges, toss with olive oil, herbs, spices and seasonings, place on trays and cook with meatloaf, turning once half way cooked to get extra crunch and colour

Combine gravy mix with cold water and mix until free from lumps, bring to boil, stir constantly, once boiled, reduce the heat and simmer for 2 minutes, stir occasionally

Once meatloaf is cooked allow to rest for ten minutes, then turn out and cut each loaf into 10 slices
6.
To serve, place 2 slices of meatloaf on each plate, add potatoes and pour over rich brown gravy
