Saffron Aioli

Would Edlyn be interested to do a Saffron aioli for seafood shops (the tartar and tomato sauce) have been around forever its now time for a new idea and saffron aioli has been an inseparable seafood sauce in Europe why not in Australia the home of great seafood? And good saffron is affordable and not scary $$-wise in production at all.
