Pancakes with Hot Butterscotch Bananas and Toasted Walnuts

Ingredients:

1kg Edlyn Buttermilk pancake mix
900ml Water

100gm Butter
150gm Brown sugar
500ml Thickened cream
½ tsp vanilla essence
3 Bananas, sliced
150gm Walnut meat

Method:

1. Place pancake mix into bowl, pour over water and blend together until it forms a smooth batter
2. Heat sauce pan with butter until foaming, fold in brown sugar and cook out for 2 minutes until a light caramel starts to form
3. Add thickened cream and vanilla to butter and sugar, bring to the boil, being careful not to over boil, simmer for 5 minutes, allow to stand before serving
4. In a fry pan on a medium heat, start cooking the pancakes until golden brown on each side (evenly divide the pancake batter to achieve 20 pieces)
5. Once pancakes are cooked, let them stand in a warm place
6. In a hot fry pan add a small knob of butter when it start to foam, toss in the sliced banana and quickly fry off
7. Arrange 2 pancakes per serve on plates, top with bananas and pour over butterscotch sauce, can be served with either whipped cream or ice cream
