Cookies & Cream Cheecake with Chocolate Fudge Sauce

Ingredients:

1kg Edlyn Cheese cake mix
700ml Cold water

1pkt Chocolate ripple biscuits
100gm Melted butter
150gm Dark chocolate pieces
120ml Thickened cream
50gm Brown sugar
½ tsp Vanilla essence

Method:

1. Add water and cheese cake mix to a bowl and mix with electric mixer at high speed for 4 minutes until smooth
2. Place chocolate ripple biscuits into food processor and crush, fold in melted butter to combine mixture
3. Pack biscuit crumb mix into a 20cm round spring form tin lined with silicon paper
4. Pour cheese cake mixture over biscuit base and chill for 2 hours
5. Place chocolate, cream, brown sugar and vanilla into a sauce pan, simmer at medium heat until all ingredients have combined into a thick smooth sauce
6. Remove cake from tin, cut into 10 pieces, place on plate topped with fudge sauce, garnish with either toasted almonds or fresh berries
