Crunchy Vanilla Mousse Slice with Berry & Mint Salad

Ingredients:

300gm Edlyn Vanilla mouse mix
500ml Cold milk
1pkt Arnott’s Butternut snap biscuits
100gm Melted butter
2 punnet Strawberries
300ml Raspberry puree
10 Fresh mint leaves

Method:

1. Place cold milk into a mixing bowl, add mousse mix and using and electric mixer, mix on medium for 1 minute until combined
2. Scrape down sides and mix on high for 6 minutes, cover with cling film and set aside
3. Place butternut snap biscuits into food processor and crush, fold in melted butter to combine mixture
4. Pack biscuit crumb mix into a 20cm square or rectangle spring form tin lined with silicon paper
5. Pour over vanilla mousse and refrigerate for 2 hours
6. Wash and quarter strawberries, pat dry, finely slice mint leaves into strips and fold into raspberry puree
7. Un-mould slice, portion into 10 pieces place onto plate or platter and top with berry salad
